Avocado Egg Toast

Ingredients:

  • 2 slices of whole-grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional toppings: cherry tomatoes, red pepper flakes, microgreens

Instructions:

  1. Toast the bread slices until golden and crisp.
  2. While the bread is toasting, mash the avocado in a small bowl with a pinch of salt and pepper.
  3. Heat a non-stick pan over medium heat and add the olive oil. Crack the eggs into the pan and cook to your preferred doneness (sunny side up or over easy works best).
  4. Spread the mashed avocado evenly on each toast slice.
  5. Place the cooked eggs on top of the avocado layer.
  6. Add optional toppings like cherry tomatoes, red pepper flakes, or microgreens for extra flavor and texture.
  7. Serve immediately with a side of fresh fruit or a glass of juice.

Tips:

  • For extra richness, add a sprinkle of feta cheese or a drizzle of balsamic glaze.
  • To make it a meal prep option, prepare the avocado mash in advance and store it in an airtight container.
