Spiced Lentil Soup

Ingredients:

  • 1 cup red lentils
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 carrot (diced)
  • 1 tsp cumin
  • ½ tsp turmeric
  • 1 tsp paprika
  • 1L vegetable broth
  • Salt and pepper to taste
  • Juice of ½ lemon
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a pot, sauté onion and garlic until translucent.
  2. Add carrot and spices, stir for 1 minute to release aroma.
  3. Add lentils and broth. Bring to a boil.
  4. Lower heat and simmer for 25 minutes until lentils soften.
  5. Blend half of the soup for creamy texture.
  6. Season and add lemon juice before serving.
